I cook fish at least 3 times a week, in various ways, including grilling on the barbecue. I'm always on the lookout for new recipes or ideas, so I was excited to get the chance to read this book. I unfortunately found many issues with the book itself and the recipes. I found it difficult to actually read because there are so many typos, outright misspellings, and grammar errors in this cookbook. Examples can be seen on this page in the author description.I find it VERY important, in fact, I find it mandatory that ingredients are spelled correctly. I noticed many misspellings of ingredients, including the word "butter" on several pages.
Overlooking the editing issues of the book, the recipes seemed decent at first, but as I read them I noticed the entire book was very incohesive. It did not feel like a collection of recipes from one single author. Instead, it was like they were assembled from a various different sources and then put in this book. The measurements vary from recipe to recipe. Some calling for grams, or milliliters, while others used pounds, tablespoons, teaspons etc. Some recipes included a combination of all different measurements. For example. One recipe called for 907 grams of fish, which is 1.99959. That's a pretty random measurement.
Many of the recipe instructions has broken English, which was not only very annoying, but also hard to follow in some cases. This book was not for me at all. There are far better barbecue fish books on the market.

My significant other is the one that likes to barbecue. My job is to find the recipes to use. Since we both like to eat fish and as he's been buying it more recently, partly for health reasons and partly because I've been finding more recipes for it, I thought I'd give this book a look. We have several bbq books, but this is the only one specializing in fish.
The best thing about this book are a good amount of great flavor ideas I haven't seen elsewhere and that we haven't already come up with on our own (I like to experiment and make up or tweak recipes to maximize taste). Balsamic vinegar elevates a citrus salmon. We've made a brown sugar salmon and a soy one but brown sugar soy, well that's new and delicious. Rubbing garlic on the grate-genius-and he now does this for other things like warming bread on the grill. The salmon burger recipe reminds of our one of the best ones we ever had at a restaurant which no longer exists, so I'm particularly happy about this easy recipe. The author adds cucumber to a kebab which I loved and he actually ate the cucumbers, a food he has always previously refused to eat.
One recipe calls for a savory seasoning but makes no recommendations, which is fine for my experiment loving self, but might bother those who need more direction. That kind of issue is rare in this book, however, so don't let it deter you from getting it.
Sometimes with fish recipes they're either underseasoned and subsequently a bit bland or overseasoned, primarily to make fish appeal to people who don't like fish. This book hits the right spot in between these two extremes, particularly because the author periodically reminds you to adjust certain ingredients according to how you prefer them. She also accomplishes excellent flavor by letting ingredients shine for themselves, for example the prosciutto wrapped scallops appropriately require less and fewer seasonings.
The first ever trout recipe ever cooked by my significant other is in here because of the rosemary basil flavor combination. And it will be cooked again and he shared it with his dad! Bacon butter trout in corn husks will be the second trout recipe he cooks. Adding bourbon to a basil lime tilapia means tilapia gets made not just cause it's affordable, but because it's tasty. He was excited about the recipe for red snapper with achiote because he loves both ingredients but had never put them together.
Most recipes include little to no accompaniment suggestions and most of the included suggestions are basic, for example- serve with a green salad or warmed bread. However, there are some dishes that including cooking vegies or fruit along with the fish, such as charred courgettes. And the ginger celery apple salad that goes with grilled squid is a definite winner.
There's very few pictures, which is fine with me, but my significant other typically prefers them. There's also no presentation suggestions, such as suggesting a color of or style dish to serve in or decorative garnishes such as specific grilled herb springs or citrus slices. There is helpful information such as explaining that a certain sauce enhances the flavor and texture of a certain dish or extolling the virtues of banana leaves. Friends that don't cook fish have told me one reason is they're never sure when the fish is thoroughly cooked. This isn't a problem here as not just times to cook but color of or flakiness of fish guidance is included.
The book is easy to understand, the steps you need to take are clear and helpful info, like how far away any fish should be cooked from the heat, is included. Occasionally, it may be overexplained but that's not necessarily bad, especially for those new to grilling, fish, or grilling fish. Sometimes I wish it were a bit better wriiten "won't to" instead of "want to" or "that turn over" instead of "that you turn over" or "removed" instead of "remove", but nothing that makes understanding difficult. There's too few commas for the way the book is written, but again nothing that impedes understanding. As with any recipe, read ahead of time so you know marinade times, how long to soak skewers and so that you're prepared to start each part of preparation when the recipe instructs.
I recommend getting this cookbook because of the strength of these recipes. These includes ingredients from cultures all over the world which are combined to get the most flavor out of the fish. If you're stuck in a rut grilling red meat, this will give you some fantastic, crowd pleasing recipes. If you've stopped grilling fish because it tends to be boring or bland, prepare to have some happy taste buds. I did receive this book at a free or discounted rate in exchange for my honest review.
